Schär Classic Biscuits  



2 cups Schar Mix It Universal  

1 ½ tbsp. sugar

1 tbsp. baking powder 

¾ tsp. salt

7 t​​bsp. butter, cut into small pieces and chilled

1 egg

1 cup buttermilk (or plain yogurt thinned with a little milk)

1 tbsp. melted butter 




Preheat oven to 425 degrees F.


Combine Mix It Universal, sugar, baking powder, and salt in bowl of food processor. 


Pulse a few times to combine dry ingredients well.


Add 7 tablespoons chilled butter and pulse a few times until mixture resembles very coarse pea-size crumbs; do not overmix. 


Transfer mixture to large mixing bowl.


Whisk together egg and buttermilk in separate bowl.


Pour egg mixture into dry ingredients and stir until a soft sticky dough forms.


Transfer dough to a work surface lightly dusted with a tablespoon of Mix It Universal.


Knead dough gently a few times to bring it together, then pat it into a 4x8-inch rectangle. 


Cut dough into eight 2-inch squares.


Place biscuits on parchment-lined baking sheet.


Bake 15 minutes or until golden.  


Brush tops of hot biscuits with melted butter.


Tip: If you do not have a food processor, mix dry ingredients in large mixing bowl, then use a pastry blending tool to “cut” in the butter until the mixture resembles coarse pea-size crumbs. 



Tip: These biscuits are best when freshly baked. To make them ahead of time, cut dough into 2-inch squares as directed, then place uncooked biscuits on a baking sheet and freeze for one hour. Once they freeze, transfer biscuits to a zipper-style plastic bag. Bake biscuits from the frozen state for 15 to 20 minutes at 425 degrees F.
